The ingredients needed to cook Enchilladas:
  1. You need 1 lb Ground Beef
  2. You need 1 packages Flour Tortillas
  3. Take 1 each Onion
  4. Prepare 1 can Enchillada Sauce
  5. Prepare 1 can Refried Beans
  6. Prepare 2 cup Sharp cheddar cheese shreaded
  7. Take 1 cup Jack Cheese Shreadded
Instructions to make Enchilladas:
  1. Heat Oven to 350
  2. Brown ground beef and onion chopped together till done.
  3. Spray 9x13 pan with cooking spray
  4. take flour tortilla and spread small amount of refried beans, add ground beef/onion mix and then equal amiunts of cheddar and jack cheese
  5. Roll up with opening at bottom. Repeat till pan is full.
  6. Top all enchillas with Enchilla sauce and cheese

Seriously the best chicken enchiladas ever, made with lots of chicken, cheese, black beans (optional), and my favorite homemade red enchilada sauce recipe. They can be prepared simply with just cheese, or be spruced up by adding a little. The sauce will be much milder if you do.
